Filled Carnival sweet fritters - The chef's recipe

Ingredients

 

400 g flour
80 g sugar
3 eggs
50 g butter
1 sachet icing sugar
1 pinch of salt
oilseed
1 jar Conserve della nonna high fruit content apricot jam
 
  
Preparation


Sift the flour onto a clean work surface. Make a well in the centre and add the sugar, melted butter, eggs and a pinch of salt. Mix the ingredients until you have a soft, smooth dough. Leave to rest for approximately 45 minutes, then roll the dough out into a very thin sheet. Cut into small strips with a pasta wheel. Put a teaspoon of apricot jam on each strip. Fold the strip over, sealing it, or cover it with another one. Press along the edges to make sure the fritters are well sealed.
Fry the sweet fritters in a little oilseed at about 180° and scoop them out as soon as they are golden brown. Place them on a grill tray or kitchen paper to drain off the oil and dust with icing sugar. Let them cool and then serve.
